Intestinal protein endocleavage
In the duodenum, trypsin cleaves peptide bonds on the carboxyl side of lysine and arginine—one of the core enzymes of dietary-protein digestion. Mealtime protein use looks at digestive comfort. The source is pancreas or recombinant microbial; duodenal endocleavage is the protease step in pancreatin blends and maps most readily after a high-protein meal.
Protease in a digestive blend
It is often combined with amylase and lipase as a pancreatin blend, corresponding to a whole meal's macronutrients. Digestive comfort and nitrogen use are the observations most often recorded. At meals it corresponds to nitrogen use; this serine protease is responsible for cleaving internal peptide bonds so whole-meal protein digestion can finish. Digestive comfort after a high-protein meal maps most readily.
