Rapid fermentation in the proximal colon
Fructose units in FOS are linked by β(2,1) bonds that gastric enzymes cannot cut, so they reach the proximal colon and are rapidly fermented by bifidobacteria into short-chain fatty acids. Trials in healthy adults see faecal bifidobacteria rise with continued use. Gas and flatus are worst when fermentation arrives too fast, and the gut needs time to adapt.
Bifidobacteria and stool frequency
Stool microbiota and bowel-movement frequency more often shift after one to two weeks of continued use. Industry makes it with fructosyltransferase from sucrose, or by hydrolyzing longer fructans into short chains. Sweetness means it is often added to drinks and powders; as fiber, what matters is whether the product matches the specs used in trials.

Cautions
