Eases fatigue from muscle acidification
During fast glycolysis, lactate releases hydrogen ions; the imidazole of carnosine's histidine residue buffers near physiological pH and delays exhaustion. Type II fibers hold more of it; meat supplies carnosine directly. People who repeat sprints or train to failure most often map onto this buffer.
Reduces protein glycation buildup
Carnosine can bind reactive carbonyl compounds, reducing buildup of advanced glycation end-products on long-lived proteins; lens and connective-tissue studies often mention this. It can also chelate transition metals. Anti-glycation of long-lived proteins is the reason this line is asked about most often.
